COFFEE CAKE 
1 c. sugar
4 eggs
1 c. cooking oil
2 c. flour
1 tsp. baking powder
1 can pie filling (apricot)
1 tsp. salt
1 tsp. vanilla

Beat eggs; add sugar then add oil in a steady stream while beater is mixing. Add flour, baking powder and salt. Spread 1/2 of mixture into a 9"x13" pan.

Spread pie filling over mixture. Spread remaining mixture over filling. Sprinkle with sugar and cinnamon. Bake 40 minutes at 350 degrees. If you wish drizzle with powdered sugar frosting.
