ROULLADEN 
2 lbs. round beef
1 lg. pickle
4 slices bacon
2 sm. onions, thinly sliced
Mustard
Salt
Pepper
2 tbsp. fat or salad oil

Cut beef into 8 strips about 4" x 2 1/2". Brush mustard on beef strips. Sprinkle with salt and pepper. Cut pickles lengthwise in eighths and bacon strips in halves. On each strip of beef, place crosswise, a piece of pickle, a bacon strip and 2 onion slices. Roll up and tie with string.

Heat fat or oil in skillet and saute roulladen on each side until brown. Cover roulladen halfway with hot water. Simmer, covered, for about 2 hours or until tender. Add more water if needed. Make gravy from drippings in skillet.
