CORN CASSEROLE 
1 (16 oz.) cream corn
1 c. yellow cornmeal
2 eggs
1/4 c. oil
1 chopped bell pepper
1 chopped onion
1 can mushroom, bits & pieces, drained
1/2 tsp. salt
1/2 tsp. baking soda
1 c. buttermilk
1 c. grated cheddar cheese

Beat eggs and mix all ingredients together. Bake in a greased 8 x 8 x 2 inch casserole at 350 degrees for 1 hour.
