CORNBREAD SKILLET CASSEROLE 
2 eggs, slightly beaten
1 c. self-rising corn meal
1 (17 oz.) cream corn
1 lb. ground beef, browned & drained
2 c. grated cheese
1 lg. chopped onion
2-4 jalapeno chopped peppers
1 c. milk
1/4 c. vegetable oil

Combine eggs, cornmeal, creamed corn, milk and oil; set aside. Grease and lightly dust with cornmeal 10 1/2 inch iron skillet. Pour 1/2 of batter into skillet layer hamburger, cheese, onions and peppers. Pour balance of batter over top. Bake at 350 degrees for 45-50 minutes. Serve with sour cream to top.
