GERMAN PANCAKE 
3 eggs
1/2 c. sifted flour
1/4 tsp. salt
1/2 c. milk
2 tbsp. butter

Beat eggs until thick and lemon colored. Gradually beat in flour and salt. Add milk slowly, beating continually. Spread a cold 10 inch skillet/7 x 11 inch pan with butter. Pour in the batter. Bake at 450 degrees for 20 minutes; reducing heat to 25 degrees every 5 minutes (grown-up should help with the baking). Pancake should be puffy and brown. Serve with applesauce or lemon juice and confectioners' sugar. Serves 2.
