SWEET POTATO-STUFFED ORANGE
HALVES
 
4 med.-sized navel oranges
1 (1 lb. 2 oz.) can vacuum-packed sweet potatoes
1 1/2 tbsp. melted butter
1 tsp. grated orange peel
1 tbsp. light brown sugar
3/8 tsp. salt
1/4 c. firmly packed light brown sugar
1/4 c. finely chopped walnuts

Heat oven to 375 degrees. Cut oranges in half crosswise and scoop out orange pulp with a grapefruit knife. Invert orange shells on paper towels to drain. Chop enough of the removed orange pulp to make 1/4 cup.

Mash sweet potatoes and add chopped orange pulp, butter, orange peel, 1 tablespoon light brown sugar and salt. Beat until smooth. Spoon into orange shells and arrange in large flat baking dish.

Mix together 1/4 cup light brown sugar and nuts. Sprinkle over potatoes. Bake 35 to 40 minutes until thoroughly heated.
