SICILIAN MEATLOAF 
2 eggs, beaten
3/4 c. bread crumbs
1/2 c. tomato juice
2 tbsp. parsley flakes
1/2 tsp. oregano
1/4 tsp. pepper
1/8 tsp. garlic powder
2 lb. ground beef
8 slices/shredded ham
6 oz. Mozzarella cheese
3 slices Mozzarella cheese

Combine all ingredients except ham and cheese. Pat out to 9 x 13 shape in pan. Put ham and 6 ounces of cheese down in middle of meat. Fold both sides of meat over ham and cheese. Seal edges. Bake 350 degrees for 1 hour.

Top with 3 slices of cheese and bake 15 minutes longer, enough to melt cheese.
