IRISH POTATO CASSEROLE 
2 lbs. frozen hash browns, thawed
1 stick butter
1 pt. sour cream
1 can cream of chicken soup
1/2 c. chopped onions
2 c. shredded cheese
1 tsp. salt
1/2 tsp. pepper
2 c. crushed corn flakes
1/4 c. melted butter

Combine the first 8 ingredients into a large bowl. Pour into a large baking dish. Toss corn flakes crumbs and melted butter and sprinkle over the top. Bake in 350 degree oven for about 45 minutes. Additional cheese can be used to your own taste.
