FRUIT STREUSEL PIE 
1 c. sour cream
3 lg. eggs
3/4 c. sugar
3 tbsp. flour
1/2 tsp. cinnamon
1/4 tsp. salt
1 tsp. vanilla
1 1/2 c. fruit filling (apple, blueberry, cherry)
Pie shell, unbaked

Beat sour cream, eggs and sugar until thoroughly blended.

Combine flour, cinnamon and salt. Blend into sour cream mixture. Add vanilla. Put into pie shell. Add fruit filling to top of sour cream mixture. Top with crumb topping. Bake 375 degrees 25 to 30 minutes.

CRUMB TOPPING:

1/4 c. brown sugar
1/4 c. flour
1/4 tsp. pumpkin pie spice
2 tbsp. butter

Mix brown sugar, flour and spice together. Cut in butter until mix resembles coarse crumbs. Sprinkle evenly over pie.
