SQUASH CASSEROLE 
2 c. cooked squash
3/4 stick butter
2 eggs
1 c. chopped onions
1 c. evaporated milk
Salt and pepper to taste
1 c. grated Cheddar cheese
2 c. cracker crumbs
1 (8 oz.) can water chestnuts, diced

Heat oven to 375 degrees and mix all ingredients together and pour into greased casserole. Bake 40 minutes. Last 5 minutes, sprinkle more cheese over top and let melt. May add 2 tablespoons sugar, 1/3 cup chopped celery, 1/3 cup bell pepper to ingredients, if desired.
