SPINACH SALAD 
1 bag spinach leaves, wash, drain, and tear into pieces
1 onion, sliced thin, and separated into rings
1/2 lb. fresh mushrooms, cleaned and sliced
1/2 lb. bacon, fried crisp and crumbled
4 hard-cooked eggs, chopped

DRESSING:

1 egg, beaten
2/3 c. sugar
1/2 c. cider vinegar
1/2 c. water

Combine dressing ingredients in a saucepan. Heat to boiling. Stir constantly. Cool. Toss with spinach, onion, mushrooms, bacon and egg.

You can prepare everything ahead separately and toss right before serving.
