HOMINY CHEESE CASSEROLE 
3 tbsp. melted butter
3 tbsp. flour
1 1/2 c. milk
1/4 c. minced onion
1 tsp. salt
3/4 tsp. chili powder
Dash pepper
1 (29 oz.) can white hominy
1 c. shredded Cheddar cheese

Combine butter and flour. Cook over medium flame until smooth. Slowly add milk, cook until mixture thickens. Add onion, salt, chili powder and pepper; mix well. Wash hominy and drain well, stir in sauce.

Pour mixture into greased 1 quart casserole. Sprinkle with cheese. Bake in a 325 degree oven for 40 minutes or until hot and bubbly.
