GLORIFIED ZUCCHINI 
4 or 5 med. zucchini
1 lg. onion
2 tbsp. butter
2 tbsp. flour (optional)
1/2 c. Sauterne, Chablis or other white dinner wine
1 (10 1/2 oz.) can cream of mushroom soup
Grated sharp Cheddar cheese
Salt

Slice zucchini in 1 inch thick slices and parboil in boiling, salted water. Drain zucchini and place in single layer in buttered 9 x 11 inch baking dish. In saucepan, brown chopped onion in butter; stir in flour. Add wine and soup; mix well. Pour over zucchini; sprinkle with grated cheese. Bake in 350 degree oven for 30 or 40 minutes. (I prepare this in a microwave safe dish and cook on High for approximately 10 minutes - depends on your oven). Serves 6-8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
