RITZ DELIGHT 
2 (3 oz.) pkg. instant coconut pudding
1 1/2 c. milk
1 qt. vanilla ice cream, softened
1 (9 oz.) container Cool Whip
60 Ritz crackers
1 stick butter, melted

Roll Ritz crackers fine. Add to melted butter. Mix well with fork. Press into an 8 x 12 inch pan, reserving some crumbs for topping. Mix pudding, milk and ice cream and beat. Pour over crumbs. Top with Cool Whip. Sprinkle with cracker crumbs. Chill 6 hours.

NOTE: Any flavor instant pudding may be used.
