We made Tourtières with half ground beef, half pork, celery, onions, mashed potato, poultry seasoning, salt, pepper and 1 teaspoon each of nutmeg and cinnamon. Made two pies.

I grew up on pork pie with Bell's seasonings or similar seasonings. I absolutely love it. My mother in law makes it with the nutmeg and cloves and I find that the cloves overpowers the flavor of the pork. I will continue to make it with the Bell's seasonings as it is my favorite.

My recipe is half ground pork and half ground veal with ground cloves, cinnamon and sage, no potato. I do like it both ways and I even mix both recipes.... ahhhh good old French Canadian cooking I miss living in Quebec! How bout some Ragu de pate de cochon.

Have made pork pie w/sage before I was made aware of the allspice. Admittedly, the allspice added another dimension to the pie,and wll definitely continue that route.

We ring in the new year with pork pie and my mom always use pork and potato and allspice. That's all and she is French Canadian. And when I make it everybody loves it. Give it a try...

My Meme (born and raised on a farm in Canada) never put potatoes in our pork pie she said they did not belong in it. She did however use nutmeg, cinnamon, onion powder and a slight dash of garlic powder but not Bell's seasoning. I make her recipe for my dad and uncle who say it is exactly like hers.

I grew up eating pork pie and my grandparents are french canadian, the bells is the only way I know. However, I would love to try the clove and cinnamon. I'm working on a new three cheese and bacon pork pie hopeing my kids would be more open to trying it. We all know pork pie has a flavor of its own.

My combo recipe from my French Canadian aunts uses allspice, cinnamon and cloves with the mashed potato and I add garlic. I can't imagine leaving out the spices as Mike T. suggests....wouldn't be pork pie at my house! We are ringing in the New Year with it.

 Mike Trinkaus (United States) says:
Forget the Bells, cinnamon, nutmeg, cloves. Don't mash the potatoes, use small diced boiled potatoes, salt, pepper and garlic. The pork should be double ground. Bake as stated above.

 Michael Mc Bride says:
As Shirley stated, omit the Bell seasoning substituting instead one teaspoon cinnamon, one teaspoon nutmeg and one half teaspoon ground cloves. Prepare the mashed potatoes with cream, butter, salt and pepper before combining all ingredients. This is a deliciously simple recipe made even better with homemade pie dough!
