BANANA MUFFINS 
1 cup sugar
1 1/2 cups (3 sticks) softened butter
2 eggs
2 cups all-purpose flour
1 tsp. baking soda
1 tsp. baking powder (note that soda and powder are different)
1 tsp. vanilla essence
3 ripe bananas
1 cup chocolate chips (OPTIONAL)

1. Preheat the oven to 350°F/180°C.

2. Sift the flour, baking powder and baking soda together.

3. Put the mixture aside.

4. Mix the melted butter and sugar in another bowl till creamy.

5. Add the eggs one at a time and then add the vanilla essence.

6. Add the flour mixture a little bit at a time. Mix well.

7. Mash the bananas with a fork till completely mashed.

8. Mix the bananas into the muffin batter. (OPTIONAL) Mix the chocolate chips with a fork.

9. Put two tablespoons of the batter into each muffin cup of the pan.

10. Bake for 20-30 minutes.

11. Let it cool before taking it out. Tastes good with tea.

Makes 24 muffins.

I think the amount of butter 1 1/2 cups butter is too much and the baking soda should be 1/2 tsp. not 1 tsp. otherwise a nice batter. Thank you.

Used 1.5 cups Canola oil in place of the butter for the Omega 3's. Used brown sugar and found them sweet and tender.

My kids and husband loved these muffins - I did make two changes, first I replaced one cup of the butter with all natural applesauce - much healthier. Also, I do not own a sifter so I just added the flour/baking soda/baking powder as true measurements. Worked fine - Yum, thanks for sharing!

Hi, I just wanted to tell you that there is a difference between softened butter and melted butter. Softened is when it is soft enough to cream with whatever it is that you are creaming it with. Then there is melted, melted is when it is melted all the way. Please be more precise next recipe. I bet these are going to be amazing though. Thank you and your welcome.

I replaced 1/2 cup of butter with 1/2 cup of applesauce and I think next time I will try to replace 1 cup of butter. I also used 3 Hershey's milk chocolate bar chopped up b/c I didn't have chocolate chips and this was decadent! Excellent recipe!
