QUICK SHRIMP JAMBALAYA 
1 lg. green pepper, sliced
1 clove garlic, minced
2 med. onions, sliced
1 (16 oz.) can tomatoes or fresh peeled
1 lb. fresh cooked ham (about 2 c.)
1/4 tsp. thyme
1/2 tsp. basil
1/2 tsp. paprika
1 tsp. salt
1/2 c. dry white wine
1 c. raw rice
1 lb. shrimp

Saute green pepper, garlic and onion in butter until soft. Add tomatoes, ham, seasonings and wine. Bring mixture to a boil. Add rice slowly, stirring constantly. Cover, simmer over low heat for 25 minutes or until rice is tender, adding water if necessary. Add shrimp, heat thoroughly and serve immediately.
