POTATO LOGS 
1 c. water
1/3 c. milk
1/2 tsp. salt
1 2/3 c. instant mashed potatoes
1 egg, beaten
1/4 c. chopped onion
2 tbsp. butter
2 tbsp. Parmesan cheese
1 tsp. parsley flakes
1/3 c. crushed corn flakes

Cover and microwave water, milk and salt to boiling in 4-cup glass measure on high; 3 to 4 minutes. Stir in potatoes; beat in egg. Cool about 30 minutes. Microwave onion and butter uncovered in 1-cup measure until onion is tender, 3 to 3 1/2 minutes. Stir into cooled potatoes with cheese and parsley flakes.

Shape 1/3 cup potatoes into log about 5 inches long. Roll in corn flakes. Repeat with remaining potatoes. Arrange logs in baking dish. Cover loosely and microwave until hot 5 to 6 minutes. 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
