CINNAMON OATMEAL COOKIES 
1 c. shortening
1 c. brown sugar
1 c. granulated sugar
2 tsp. vanilla
2 eggs
1 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
3 c. uncooked oatmeal

Cream together shortening, brown sugar, granulated sugar; beat in vanilla and eggs. Sift together salt, flour, soda and cinnamon and add to mixture. Stir in oatmeal. Drop by teaspoonful onto greased cookie sheet. Bake 12 minutes at 350 degrees.

Cookies went flat, so I would increase flour by 1/4 of a cup and I doubled the cinnamon, baked for 10 minutes because I like chewy cookies. Makes 4 dozen small cookies.

I doubled the cinnamon and baked them for 9-10 minutes to keep them more chewy. They were easy and taste great!
