WATERMELON PICKLES 
10 lb. watermelon, peeled rind with most of red trimmed off
12 lb. granulated sugar
1 qt. white vinegar
40 drops oil of cloves
40 drops oil of cinnamon

Cover with cold water and let stand 24 hours. Wash and drain well. Cover with water and boil slowly for 12-15 minutes. Drain and wash in cold water. Drain real well and add to vinegar solution. Let stand 24 hours, then bring to boil and boil for 10 minutes. Pour in crock; stir and let stand 5 days, then put in jars and seal.
