 Chef Joey (Florida) says:
You can use 2 cans of pumpkin instead of the bananas and adding 2 teaspoons of pumpkin pie spice instead of the cinnamon. Great versatility.

This is the BEST banana bread I have ever had! It is so easy to make and absolutely scrumptious. Yummy, Yummy, Yummy. The only thing extra I added was 1 tsp. of vanilla instead of 1/2 tsp. because I love the flavor of vanilla with banana. I shared with the neighbor and she immediately wanted the recipe. :)

The "secret" to the moistness is the 1 cup of oil! This is an excellent recipe! It is very moist... I did, however cut back on the sugar by 1/2 cup... still delicious. I have received compliments from family and friends... which is always nice. This is my new "go to" recipe for banana bread. It will be yours too!

My goto recipe! Very moist indeed and very suitable recipe to make it your own. I substitute white whole wheat flour, add extra bananas and reduce sugar by 1/3 to make it healthier.

The scant instructions could have been made more precise for inexperienced bakers but it only goes to show how no-fail it really is.

This recipe is awesome! Thanks so much for sharing it! My Mother had passed down my grandmother's special banana bread recipe to me, but I had misplaced it. This recipe is very close in taste and texture. It brought back many good memories for me as well.
