MOLASSES COOKIES 
1 c. sugar
1 c. shortening
1 c. light molasses or sorghum
1 tbsp. vinegar
5 c. flour
1 tsp. ginger
1 tsp. cinnamon
1/4 tsp. salt
2 tsp. baking soda
1/3 c. water

Cream sugar and shortening. Add molasses and vinegar. Combine flour, ginger, cinnamon and salt. Add alternately with baking soda and water to creamed mixture. On lightly floured board roll dough to 1/4 inch thickness. Cut with 2 1/2 inch cookie cutter or glass. Place on greased baking sheet. Bake at 375 degrees for 8 minutes. Do not overbake.
