PUMPKIN NUT COOKIES 
1/2 c. shortening
1 c. sugar
2 eggs, beaten
1 c. Libby's pumpkin
2 c. sifted flour
4 tsp. baking powder
1 tsp. salt
2 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1 c. raisins or dates, cut up
1 c. chopped nuts

Cream shortening, add sugar gradually and cream until light and fluffy. Add eggs and pumpkin; mix well. Sift flour, salt, baking powder, and spices together; stir in dry ingredients and mix until blended. Add raisins or dates and nuts.

Drop by teaspoonfuls on greased cookie sheet. Bake in 350 degree oven for 15 minutes. Makes 4 dozen cookies. May be frozen if desired.
