FLUFFY RICE PUDDING 
1 c. rice
1 c. sugar
2 qts. milk
4 eggs, separated

Put rice, sugar and milk in a large pot and cook slowly for a long time until mixture thickens, stir often to prevent rice from sticking. Once thickened, beat egg yolks, add part of the hot mixture to the egg yolks, add this mixture to the remaining rice in the pot. Mix well and work for 10 more minutes. Beat egg whites until stiff and fold into hot rice.
