COUNTRY POTATOES 
10 sm. red potatoes, scrubbed
1/4 c. butter
3 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1 c. water
1 1/2 tsp. lemon juice
1/4 lb. bacon, fried and crumbled
2 tbsp. chives
2 tbsp. parsley

Peel 1/2 inch strip around center of each potato. Cook potatoes until tender in salted water. Place in casserole.

Melt butter, and stir in flour and cook until bubbly. Add salt and pepper. Add water and cook until just thickened. Add lemon juice and pour over potatoes in casserole. Top with bacon, chives and parsley. Bake at 325 degrees for 20 minutes.
