FROZEN COCONUT AND SOUR CREAM
CAKE
 
1 box Duncan Hines Butter Cake Mix
2 (6 oz.) pkgs. frozen coconut
1 (16 oz.) sour cream
2 c. Cool Whip
2 c. white granulated sugar

Mix coconut, sour cream and sugar. Refrigerate for one day. Bake cake mix according to directions making four layers. Spread coconut mixture on cake layers reserving 1 cup of coconut mixture for the icing.

Mix the cup of coconut mixture with Cool Whip and spread on top and sides of the cake. Keep in refrigerator for 3 days before serving.

2021 - No frozen coconut anymore. I wonder why. Does anyone have a substitute for this recipe? So sad. This the the very best cake. You cannot use regular flake coconut.

Have you ever made this with plain yogurt and Splenda instead of sour cream and sugar? Would that work? Also, I'm a mess at making layer cakes. Any other ways to get the same flavor result? This looks delicious!

This cake is great when made into a 9x13 cake pan instead of cake pan layers.

I can usually find Tropic Isle frozen coconut at Kroger and HEB and the Goya brand at Fiesta. I cannot find any at all. I have experienced Tropic Isle on recall once.
