SOUR CREAM CHEESECAKE 
1 3/4 c. graham cracker crumbs
1/3 c. butter, melted
1/4 c. granulated sugar
3 (8 oz.) pkg. cream cheese, softened
1 1/2 c. granulated sugar
4 eggs
1 tbsp. vanilla

Topping:

1 1/2 c. sour cream
1/4 c. sugar
1 tsp. vanilla

Blend graham cracker crumbs, sugar and butter together. Press crumbs on sides and bottom of a well-greased 10-inch spring-form pan.

Mix softened cream cheese and sugar for 3 to 5 minutes. Add eggs and vanilla. Beat the entire mixture for 30 minutes. Pour the cream cheese batter into the graham cracker crust.

Bake at 300°F for 50 to 60 minutes. Remove and cool at room temperature for 20 minutes before finishing with sour cream topping.

Blend sour cream, sugar and vanilla together. Pour on top of cooled cheesecake. Return to 300°F oven for 10 more minutes.
