VEAL SCALLOPINI 
3 lbs. veal steak, 1/4 to 1/3 inch thick
1/2 c. flour
Salt and pepper
Paprika
1 (6 oz.) can broiled sliced mushrooms
1 cube beef bouillon
1 (8 oz.) can seasoned tomato sauce
1/4 c. chopped green pepper

Pound meat with pounder and cut into serving pieces. Season flour with 1 teaspoon salt, dash of pepper and 2 teaspoon paprika. Coat meat with mixture. Brown in hot fat. Place in 9x13x2 inch baking dish. Drain mushrooms, reserving liquid. Add water to mushroom liquid to make 1 cup. Heat to boiling. Dissolve bouillon cube in hot liquid and pour over meat. Bake at 350 degrees for 30 minutes.

Combine tomato sauce, green pepper, and mushrooms. Pour over meat and continue baking for 15 minutes. Baste meat with sauce just before serving. Sprinkle with Parmesan cheese.
