SHRIMP SALAD 
2 c. shrimp, cooked
8 stalks celery, peeled & sliced crosswise
1/2 lemon
4 green onions, chopped with stems
1 c. Hellmans mayonnaise
Salt
White pepper
Capers, (optional)
Bibb Lettuce

Split cooked shrimp lengthwise. Combine shrimp, celery, and onion together in a bowl. Squeeze juice from lemon over all. Add salt and pepper to taste and mix well. Add mayonnaise and chill. Serve on Bibb Lettuce with a little capers on top.
