JAM CAKE | |
1 c. butter 2 c. sugar 3 eggs 2 c. flour 1 c. buttermilk 2 tbsp. baking soda 1 tbsp. allspice 1 c. jam 1/4 c. raisins 1 c. nuts 1 tbsp. vanilla 1 1/2 c. coconut Mix butter, sugar and eggs. Add jam (preferably blackberry) and vanilla. Mix flour, spices, nuts, raisins and coconut. Add soda to milk and add alternately with flour mixture to butter batter. Bake in moderate oven at 350 degrees. Cook in 3 greased and floured cake pans. Bake approximately 40-45 minutes or until toothpick inserted in center comes out clean. When cool, ice with icing recipe and store in cool place up to 6 weeks to mellow. ICING: 1 c. sweet milk 1 tbsp. vanilla 1/2 c. butter 2 c. sugar Cook milk and sugar to soft boil stage. Add butter and vanilla. Beat until spreading consistency and ice cooled cake. |
