CREAMY RICE PUDDING 
3 lg. eggs
1/2 c. sugar
3 c. milk
2 c. cooled, cooked long grain or med. grain rice
2 tsp. vanilla
1 grated lemon peel (optional)

Preheat oven to 325 degrees. Lightly butter a 1 1/2 quart glass baking dish. In a large bowl, lightly beat eggs with sugar. Stir in milk, rice, vanilla and lemon peel. Pour into prepared dish. Place dish in a baking pan on oven shelf. Pour boiling water into pan level to rice pudding mixture in glass dish. Bake 1 hour 10 minutes or until pudding is creamy-thick. (Excellent with your favorite lemon sauce).
