HEALTHY BANANA BON BONS 
Med. ripe bananas
1/2 c. smooth peanut butter
1 1/2 tsp. vanilla
1/8 tsp. salt
4 tbsp. carob
3/4 c. boiling water
1/2 c. dates or date nuggets (packed in cup)

TOPPINGS OF CHOICE:

Chopped almonds, peanuts, walnuts or unsweetened coconut

Cut bananas into 1 inch chunks. Set aside.

Hand mix first 3 ingredients in medium microwave proof bowl. Set aside.

Blend in blender carob, water and dates. Quickly pour out into peanut butter mixture and mix by hand.

Since microwave ovens vary in power, you may need to adjust your cooking time.
