SPINACH AND CHEESE PIE 
9 inch unbaked pie crust
10 oz. pkg. frozen, chopped spinach, thawed and drained
1 c. shredded Swiss cheese
1/3 c. sliced scallions
1/4 c. grated Parmesan cheese
4 eggs, lightly beaten
1 1/4 c. light cream or milk
4 tsp. Worcestershire sauce
1/2 tsp. salt

Prick pie crust with a fork and bake in preheated oven set at 450 degrees for 8 minutes. Layer half of the spinach, Swiss cheese, and scallions then repeat for a second layer. Combine the remaining ingredients and pour over spinach mixture. Bake 10 minutes. Reduce oven to 325 degrees and bake until firm, about 20-25 minutes. Cool 5 minutes before cutting.
