PUMPKIN BREAD | |
4 eggs, beaten 3 c. sugar 1 c. oil 1 (16 oz.) can pumpkin 3 1/2 c. flour 2 tsp. baking soda 1 tsp. baking powder 1 tsp. pumpkin pie spice 1 tsp. cinnamon 2 tsp. salt 1 c. mincemeat 2/3 c. water 1 c. chopped pecans Beat eggs, sugar and oil in a bowl until light. Add pumpkin. Add sifted dry ingredients. Mix well. Add mincemeat, water and pecans. Beat until well mixed. Spoon into a well-greased bundt pan or 4 well-oiled 1-pound coffee cans. Bake at 350 degrees for 1 hour. Cool, remove from pan or cans. Yield: 48 slices. |
