CHERRY-OATMEAL COOKIES 
1/2 c. shortening
1/2 c. butter
1 c. packed brown sugar
1 c. sugar
2 eggs
1 tsp. vanilla
1 1/2 c. flour
1 (8 oz.) jar maraschino cherries, drained and chopped
1/3 c. coconut
2 c. quick oats
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Combine shortening, butter and sugars; beat until fluffy. Add eggs and vanilla. Sift together dry ingredients. Add to creamed mixture along with cherries, oats and coconut. Chill 1 hour. Drop by tablespoon onto ungreased cookie sheet. Place whole cherry in center.

Bake at 375°F for 10 to 12 minutes.
