COUNTY PIE 
1 lb. lean ground beef
1/2 c. bread crumbs
1/8 tsp. oregano; optional
1/4 c. chopped onions
1/4 c. chopped green peppers
1/4 tsp. pepper
1 1/2 tsp. salt
2 c. tomato sauce
1 1/3 c. cooked rice
3/4 c. grated cheese
1 c. water
1/2 tsp. salt

Combine beef, crumbs, onion, peppers, salt, pepper, and 1/2 cup tomato sauce. Pat this mixture on bottom and sides of a greased 9 inch pie plate. Flute around the edges. Combine rice, remaining tomato sauce, and 1/2 cup cheese. Spoon mixture into pie crust shell of meat mixture. Cover with aluminum foil. Bake at 350 degrees for 25 minutes. Uncover and sprinkle remaining cheese and bake 5 minutes longer. Serves 4.

CRUST:

1/2 c. tomato sauce
1/2 c. bread crumbs
1 lb. very lean hamburger
1/4 c. chopped onion
1/8 tsp. oregano; optional
1/4 c. chopped green peppers
1 1/2 tsp. salt
1/8 tsp. pepper

Combine ingredients. Pat meat mixture into bottom and sides of greased 9 inch pie platen pinch 1 inch flutings around edge. Set aside.

FILLING:

1 1/3 c. Minute rice
1 c. water
1 1/2 c. tomato sauce
1 c. grated cheese
1/2 tsp. salt

Combine sauce, rice, salt, water, and 1/4 cup grated cheese. Spoon into meat shell. Cover with foil; bake at 350 degrees for 25 minutes. Uncover; sprinkle with remaining cheese and bake 15 minutes longer.
