STRAWBERRY - WALNUT BREAD | |
1 pt. fresh strawberries 1 c. sugar, divided 1 1/2 c. flour 1 tsp. cinnamon 1/4 tsp. salt 3 eggs 1/3 c. oil 1 c. chopped walnuts TOPPING: 1/4 c. brown sugar 1/4 tsp. cinnamon 1/8 tsp. nutmeg 1 tbsp. soft butter 1/4 c. chopped nuts Cut strawberries into half inch pieces. Makes about 2 cups and add 1/2 cup sugar; set aside. Combine flour, baking soda, cinnamon, and salt. Beat eggs with 1/2 cup sugar until pale yellow. Stir in oil and vanilla. Add walnuts and flour mixture. Stir only until blended. Add strawberries and the liquid. Put in well greased and floured bread pan. Bake 45 minutes at 350 degrees. Best when sweet, locally grown fruit is used. Topping: Sprinkle on top before baking. Option: Substitute raspberries for strawberries and pecans for walnuts. |
