COQ AU VIN 
Using chicken pieces you prefer, salt and pepper and brown in melted butter. Transfer to casserole. Slice 1 onion into the skillet and saute lightly. Add to chicken. Add a small can of drained mushrooms (or fresh ones) and a cup of wine (Burgundy or claret). Simmer in oven about an hour at 300 degrees.
