ALICE'S BAKED CHICKEN 
1 whole frying size chicken, skinned
1/2 c. onions, chopped
1/2 c. apples, chopped
1/2 c. celery, chopped
1 tsp. cinnamon
2 tsp. flour
4 to 5 cloves garlic, minced
2 tbsp. butter
1/2 tsp. dried parsley
1 tsp. lemon juice
Freshly ground pepper to taste

Fill internal cavity of chicken with the mixture of apples, onions and celery and place in baking pan. Sprinkle chicken with pepper, cinnamon and flour. Cover with a foil tent (open at both ends) and bake at 350 degrees for 1 hour.

Remove foil. Bake at 350 degrees for 30 minutes. In a pan, melt butter and saute garlic over moderate heat until tender. Add parsley and lemon juice and immediately pour over chicken. Let stand 15 minutes for flavors to blend -serve proudly!
