SHRIMP OR CRABMEAT AU GRATIN | |
3 tbsp. onion 1 (4 oz.) can drained mushrooms (or fresh) 3 tbsp. butter 1/4 c. flour 1/4 tsp. dry mustard 1/2 tsp. salt Italian bread crumbs 1/8 tsp. pepper 1 1/2 c. milk 1 c. grated Cheddar cheese Dash of celery salt 1 1/2 tsp. parsley flakes 1 lb. cooked and peeled shrimp or 1 lb. crabmeat or combination Cook mushrooms and onions in butter until tender. Add flour and seasonings, blending together. Gradually add milk and cook until thick, stirring constantly. Add 3/4 cup cheese and stir until melted. Add seafood and pour into well greased casserole or individual ramekins. Combine remaining cheese and crumbs and sprinkle over top. Bake 10 minutes at 400 degrees. May be made before and refrigerated. Cook longer if refrigerated. |
