COCONUT OATMEAL COOKIE 
1 c. white sugar
1/2 c. brown sugar
1 1/2 c. flour
1 c. shortening
1 egg
1 tsp. baking powder
1 1/4 c. oatmeal (quick)
1 tsp. baking soda

Cream sugars and shortening, add egg blend well. Add dry ingredients and mix. Add oats and coconut. Roll into balls. Bake 10 to 12 minutes in a 375 degree oven.
