EASTER BREAD 
1 tbsp. salt
8 c. flour
1 doz. eggs
2 c. sugar
1/4 lb. butter (dissolve in 1/4 c. hot water)
1 tbsp. grated lemon and orange rind
1/4 lb. or 6 packets of yeast dissolved in 1/4 c. warm water

Add a bit of sugar to yeast dissolved in lukewarm water to promote rising of yeast. Add boiling water to butter to melt it. Combine flour, sugar and salt. Make a hollow in flour - add eggs, butter and yeast and rind. Mix and rest 10 minutes. Knead dough until satin-like, about 10 minutes. Let rise once, put in well buttered pans, then let rise for about 45 minutes. Bake at 375 degrees for 30 minutes or until done.

This dough can be shaped into bunny rabbits to put in children's Easter baskets. If you do this you may want to put jelly beans or raisins in dough as eyes and nose.
