PUMPKIN OAT BRAN MUFFINS 
1 1/2 c. oat bran
2/3 c. firmly packed brown sugar
1/2 c. all-purpose flour
1 tsp. pumpkin pie spice
1/4 tsp. salt
1 c. mashed cooked or canned pumpkin
1/2 c. skim milk
2 egg whites, beaten
2 tsp. vegetable oil

PUMPKIN PIE SPICE:

2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. allspice

Mix well.

Combine first 6 ingredients in a large bowl, stir and mix well. Make a well in the center of mixture. Combine pumpkin and next 3 ingredients, stirring well. Add dry ingredients. Stir until dry ingredients are moistened. Spoon into muffin pans which are lined or lightly greased. Fill 2/3 full. Bake at 425 degrees for 20 minutes. Remove from pans immediately. Serve warm or at room temperature. Yield: 1 dozen.
