SAUSAGE STUFFED CHICKEN 
4 lg. chicken breast filets
1/2 lb. ground sausage
1/2 c. onion
1/2 c. green pepper
1/2 c. mushrooms
1/2 c. cheese
1/2 c. butter
1 1/2 c. bread crumbs
1/2 c. lemon juice
1 tbsp. sage
1 tbsp. basil
1 tsp. celery seed
1 tsp. seasoning salt
1 tsp. pepper

Split breast and pound flat. Season both sides with lemon juice, seasoning salt, pepper and sage in flat pan and marinate 1/2 hour in refrigerator. (Do not use metal pan.) Brown sausage. Drain pan and sausage. Saute vegetables in pat of butter.

In same pan until tender, toss vegetables, stuffing, cheese and sausage until blended. Place chicken on 8 inch square of oil. Place a pat of butter in center of chicken and 1/4 of stuffing mixture. Sprinkle with basil and celery seed. Fold chicken around stuffing and foil around chicken into a ball leaving top slightly open. Bake at 400 degrees for approximately 20 minutes.
