SPINACH QUICHE 
2 c. fresh spinach
2 tbsp. onion
1/4 tsp. rosemary (crushed)
1 c. mushrooms
3 tbsp. butter, melted
1 tbsp. flour
1 c. shredded Swiss cheese
1 1/2 c. plain yogurt
1/4 tsp. sugar
1/4 tsp. pepper
1/2 tsp. salt
4 eggs, lightly beaten
1 (9 inch) pie shell, baked

Cook spinach, onion and mushrooms in a steamer. Remove stems from spinach first. Beat eggs, add yogurt and other ingredients and mix well.

Add mixtures alternately to cooked pie shell, layering egg mixture with spinach and mushrooms. Add cheese on top. Bake 400 degrees, 15 minutes; 325 degrees, 30 minutes. Cool.
