GINGER APPLE SAUCE 
3 lb. apples
1/4 c. apple cider
1 tbsp. minced candied ginger
1/4 tsp. ground ginger
1 pint vanilla
Ice cream, optional

Core apples, cut into eights, combine apples and cider in medium saucepan. Cook, covered, over medium heat until apples are soft, about 20 minutes, press apples through food mill. Discard skin, stir in sugar candied ginger and ground ginger. Serve warm with ice cream or refrigerate until cold and serve as a snack.
