CRANBERRY MUFFINS 
2 c. fresh cranberries, chopped
1/3 c. sugar
6 tbsp. orange juice
1 tbsp. orange rind
2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. butter
1 c. sugar
1 egg

Combine cranberries, 1/3 cup sugar, orange juice and rind. Cream butter, 1 cup sugar and egg. Add sifted dry ingredients to creamed mixture alternately with cranberry mixture. Fill greased muffin tins 3/4 full. Bake at 375 degrees for 20 minutes. Yields: 18.
