VEGETABLE FRITTERS 
1 c. pancake mix
1 c. milk
1 egg, beaten
1 tsp. cooking oil
Bite-size vegetables

Blend first 4 ingredients into a smooth batter. Dip bite-size bits or portions of cooked vegetables into batter and drop into hot fat to brown. Deep fat heated to 370 degrees.

Eggplant, cauliflower, asparagus and broccoli make delicious fritters. Drain on paper towel and serve hot.
