RICH AND CREAMY POTATO SOUP 
6-8 potatoes, peeled and cut into bite size pieces
1 med. onion, chopped
1 carrot, pared and sliced (optional)
2 chicken bouillon cubes
5 c. water
1 tbsp. salt
Pepper to taste
1/3 c. butter
1 can evaporated milk

Boil potatoes, onion and carrot in 5 cups water. When tender, add milk, butter and bouillon. Let simmer.
