FLOUR TORTILLAS 
2 c. unbleached flour
1 tsp. baking powder
1 tsp. salt
1 tbsp. lard (Monteca)
1/2 c. very warm water

Mix flour, salt, baking powder, and lard in a large bowl. As mixing the ingredients, it should feel similar to a corn meal texture. Add 1/2 cup of very warm water and mix well by hand. Knead dough until it feels soft like bread dough. Split dough into 12 balls approximately 3/4 inch balls. Roll out each ball into a rough tortilla. (Can cut edges with a knife if you want to form a perfect round shape.) Cook on a hot cast iron skillet with no grease. Be sure and turn the side which is up over on the skillet facing down. When tortilla forms a bubble of any kind, then turn it over to cook on the other side. May need to adjust burner temperature as cooking.

Practice makes perfect! First batch is rarely great.
